Does the vampire find a way to become human? Do they choose to love each other within the finite time they have? The resolution of the mortality question is everything.

I prefer stories where they grapple with the choice. 'The Dark Angel' series by Meredith Ann Pierce is an old-school YA fantasy where the human heroine must literally journey to the vampire's star to be with him. The ending is bittersweet and perfect. It stays with you because it doesn't offer an easy fix.
