I'm always a bit skeptical of multiverse stories that use it just for cameos or cheap stakes. The best ones, for me, use it to ask real questions about identity and choice. Like, if there are infinite versions of you, what makes you you? That's the depth I look for.
If you want the parallel universe concept to be the entire point of the narrative structure, 'Life After Life' by Kate Atkinson is stunning. It follows Ursula Todd as she lives her life over and over again, dying and being reborn, with each iteration branching into a slightly different path. The depth comes from seeing how tiny choices ripple out into vastly different outcomes, exploring fate, chance, and resilience across dozens of parallel lives.
How about something older and weirder? 'A Wrinkle in Time' by Madeleine L'Engle. Sure, it's a children's classic, but the concept of tessering—wrinkling space and time—to visit other worlds like Camazotz is a foundational parallel universe idea. It explores the battle between conformity and individuality across these worlds with a surprising amount of philosophical depth for its age.
