Real complexity, for me, shows up in warriors whose conflict isn't just internal angst, but is woven into the very magic system they use. That's why I keep recommending 'The Stormlight Archive'. Kaladin Stormblessed is the poster child. Yes, he's a brilliant fighter and spear master, but his prowess is inextricably linked to his depression and his oath to protect. The fights are epic, but they're emotional events first. You can't separate the flash of the Shardblade from his struggle to believe he deserves to wield it.
Another angle is the warrior who isn't physically the strongest. Viv from Travis Baldree's 'Battlemage Farmer' books is a retired archmage trying to farm, but her past as a military weapon keeps dragging her back into conflict. Her complexity is in the denial and suppression of that warrior identity, making the eventual, calculated releases of power so much more impactful than non-stop action.

I'd point you toward the 'Cradle' series by Will Wight as a prime example. The combat is phenomenal and constant, but the complexity comes from his internal conflict between the compassionate person he was raised to be and the terrifying force he must become to survive his world.
For something grittier, the 'Acts of Caine' books by Matthew Stover, especially 'Heroes Die', are essential. Caine is a professional assassin from a futuristic Earth who 'acts' in a fantasy realm for entertainment, but the violence is brutally real. His complexity is deeply psychological, wrestling with the performative cruelty of his role versus his own crumbling humanity. The action is visceral and technical, but it's the philosophical weight behind each blow that makes him unforgettable.
If you lean toward the more traditional fantasy end, R. F. Kuang's 'The Poppy War' trilogy features Rin, who begins as a scholarship student and becomes a military commander channeling the power of a vengeful god. Her descent into strategic and moral darkness, making horrifying choices for victory, is the definition of a complex warrior. The battle sequences are large-scale and tactical, but the real hack-and-slash is through her own psyche.

A lot of titles in this space, especially the translated stuff, treat characters like cardboard cutouts being moved from one fight scene to the next. But the ones that get it right? They use the action to force choices. It's not about hitting things; it's about who you become because you had to hit those things. Does the MC still try to save a village after losing their own? Do they start collecting forbidden techniques even if it corrupts their soul? The fight choreography itself can be a window into their training, their discipline, or their growing ruthlessness. The action sequences should have stakes beyond just winning—they should chip away at or build up who the person swinging the sword is.
I keep thinking about 'Berserk'. Guts's battles are visceral and non-stop, but you understand every scar, both physical and mental, because the carnage is inseparable from his trauma and his rage. That's the gold standard. A lot of web serials just have the guy level up and get cooler swords, which is fun, but forgettable. The balance is remembering that every slash can leave a mark on the character's psyche, too.
Somebody asked about epic battle scenes? Oh, you've got to dig into the old-school fantasy doorstoppers. 'The Malazan Book of the Fallen' by Steven Erikson is brutal, like the Siege of Capustan—it's less a battle and more a meat grinder told from a dozen different perspectives. The genre is weirdly good at portraying resilience as a form of virtue. The spectacle is the point, sure, but the best stuff makes you wince at the cost of it. The heroism is in the bloody knuckles and the refusal to stay down, even when the smarter move is to run.
Sadeas's betrayal in 'The Way of Kings' sets up a revenge plot for Dalinar and Adolin, but the real complexity emerges with Elhokar, the young king. He's not a warrior; his revenge is tangled in his insecurities, his paranoia, and his desperate desire to be a strong leader like his father. His attempts at vengeance are clumsy, politically dangerous, and reveal his deep flaws. It's a fascinating look at a weaker, more human character trying to navigate the expectations of a revenge culture and failing miserably, with huge consequences.
