'The Last Don' does this well with the transition from old-world to new-world crime.

Their arcs are about gaining or losing power, not about genuine self-discovery. For real depth, I'd point to literary fiction about outlaws: 'Blood Meridian' by Cormac McCarthy isn't mafia, but Judge Holden's... permanence is the opposite of an arc, and that's the point.

The kid's journey from innocence to... whatever he is at the end, is subtle and terrifying. McCarthy doesn't do easy transformation. Or, 'The Savage Detectives' by Roberto Bolaño follows a group of poet-outlaws over decades, and their fading dreams feel more real than any mobster's rise to power. The arc is one of dissipation, not climax.
