I'd prioritize based on your tolerance for angst. Book 1 is light and fun. Book 2 introduces serious family drama. Book 3 has a prolonged separation arc that some find stressful. If you're in a mood for pure escapism, maybe just read Book 1 and the holiday special. The series matures and gets heavier, which isn't for everyone.
My sister adored the first book but DNF'd the second because the tone shift was too abrupt. Knowing that, you might choose to treat the first as a standalone and only continue if you're invested in the grittier challenges they face.

the 'correct' order has changed. Early fans only had Books 1 and 2, so the prequel didn't exist. Then the short stories were published on a blog before being collected. The 'definitive' order is a recent construct. The older, purist view is just 1, 2, 3, and everything else is optional apocrypha.
So you'll get different answers depending on when someone entered the fandom. Newer fans tend to be more completionist.

From a writing craft perspective, reading in order shows the author's improvement. The dialogue gets sharper in Book 2, and the plotting in Book 3 is much tighter. You can see the author finding their voice. The first book has some clunky exposition that the later books avoid by assuming you know the characters.
So if you're a writer or someone who appreciates the technical growth, publication order is a mini-masterclass. If you just want the most polished entrypoint, Book 2 is actually the strongest stand-alone novel, though you'll spoil the 'will they/won't they' of Book 1.

Why does everyone make such a big deal about order? These are romance novels, not the 'Malazan' series. Pick up whichever one has the cover you like and dive in. The core plot is pretty straightforward—two people meet, face obstacles, get together. You'll figure it out.
I started with book three because someone left it on a train. Had zero context for the side characters, but the main couple's story was self-contained enough to enjoy. Went back and read the earlier books later, which was fun in a 'seeing how it all began' way. Don't stress; just read.

My pragmatic take: Check the page count. Book 1 is the shortest. If you're unsure about committing, start there. If you love it, you'll happily continue in order. If you're lukewarm, you can stop without feeling you've left a huge story unfinished. Book 2 is a doorstopper, so be prepared for a longer haul if you continue.
