FF.net actually has a surprising number of deep cuts if you're patient. I found a multi-chapter 'Hanji & Levi in the world of 'Fullmetal Alchemist'' story there years ago that I still think about. The writing was technical in a way that fit both fandoms. The downside is the search is terrible, so you have to rely on community rec lists or just get lucky. AO3 is better organized, but sometimes the most inventive mash-ups pop up on the older platform because the authors have been there forever.

The best ones I've read tend to be on the shorter side, like 20-30k words, where the author has a solid concept and executes it without dragging.

That said, you do have to wade through a lot of 'Hanji experiments on the Uchiha clan' premises to find the gems. There's a fantastic one where Levi runs a tea shop in a fantasy city and Hanji is a chaotic wizard researcher; it nailed their dynamic perfectly. FanFiction.net has volume, but the signal-to-noise ratio is rough, and Wattpad is mostly AUs that don't really feel like crossovers in the traditional sense. AO3 writers seem to put more thought into how the worlds actually collide.
