I’m gonna be the dissenting voice here and say a lot of classic reverse harems aren’t truly slow-burn; they just have a dense protagonist who’s oblivious for 200 chapters. The ‘burn’ often feels accidental. For actual, intentional slow-build, I’d point to ‘Requiem of the Rose King.’
It’s a Shakespeare adaptation, so the relationships are tangled, tragic, and simmer for ages. The romantic and political tensions are inextricably linked, and every glance or touch feels weighted with decades of history and future consequence. It’s a brutal, beautiful crawl.
I’m always wary of adaptations that cut the slow-burn short. The anime for ‘Kimi ni Todoke’ (not a harem, but a masterclass in slow-burn) was agonizingly slow in the best way. Sometimes studios condense that, and you lose the delicate fabric of hesitation and small steps that make the romance feel real.

Series that pass this test, like many of the fantasy ones mentioned, have staying power. You reread them for the adventure and the friendships, and the romance is the wonderful bonus that unfolds along the way. That's the hallmark of truly great storytelling in this niche.
The worst thing an author can do in a slow burn is use filler. Padding the middle books with repetitive arguments, side quests that go nowhere, or new characters who add nothing just to hit a word count deadline is a surefire way to lose reader goodwill. The story must always be moving forward, even if the romantic relationships are moving at a snail’s pace. Character goals should be advancing, mysteries should be unfolding, and the world should be expanding. The ‘slow’ should apply to the romance, not to the plot itself. A gripping plot makes the romantic delays feel like tantalizing torture. A boring plot makes them feel like a slog.
I genuinely think some of the best execution of this is in fanfiction. Writers there aren't constrained by chapter counts or editorial mandates, so they can spend 100k words just on the emotional buildup. Searching for 'slow burn reverse harem' on AO3 with your favorite fandom filter can yield astonishingly good original-character stories or canon rewrites that specialize in exactly this layered, patient tension.
The freedom of the format allows for deep dives into each character's psyche, making the eventual convergence of emotions feel incredibly earned. Some of the most compelling relationship dynamics I've ever read have been in that space.
