'The Road Virus Heads North' from 'Everything's Eventual' is a personal favorite. It's about a haunted painting that changes as it gets closer to you. The concept is simple, but the execution is masterful in its building, relentless dread.
It's a great example of a 'high concept' horror idea done right. You know exactly where it's going, but you can't look away. Perfect for a stormy night read.

I always recommend 'Strawberry Spring' from 'Night Shift.' It's a fog-shrouded campus murder mystery with a fantastic unreliable narrator and a killer last line. The atmosphere is so thick you can feel the damp chill.
It's less about a clear monster and more about the eerie mood and the possibility of a hidden killer among the ordinary. It proves suspense can be built from ambiance and paranoia as effectively as from a visible threat.

I have a weird affection for 'The House on Maple Street' from 'Nightmares & Dreamscapes.' It's a Bradbury-esque tale of children discovering their stepfather's house is actually a rocket ship. The joy of discovery and rebellion is infectious, with a triumphant, explosive ending.

If the new reader is already a horror aficionado tired of the usual tropes, pointing them to a collection with deep cuts like that might be more rewarding. They'll feel like they're discovering hidden gems instead of reading the assigned classics. There's a pride in that. 'Nightmares & Dreamscapes', for all its unevenness, is packed with those strange, wonderful deep cuts.
